Rava Payasam

Rava Payasam
Indulge in the creamy goodness of Rava Payasam, a traditional South Indian dessert that blends the richness of Bombay Rava (Sooji) with the sweetness of sugar and the creamy texture of milk. Enhanced with the aromatic essence of powdered cardamom, this delicacy is garnished with golden raisins and crunchy cashew nuts, creating a symphony of flavors in every spoonful. It's a delightful treat perfect for any festive occasion or as a comforting dessert after a hearty meal.
Ingredients
- 1 Cup Bombay Rava (Sooji)
- ½ Cup Sugar (White or Brown)
- 2 to 3 Cups Milk
- 2 Tsp Ghee
- 4 or 5 Nos Cardamom (powdered)
- 10 Nos Raisins
- Cashewnuts (as required)
- 2 Cups Water
Instructions
- Pour Ghee on a hot pan
- Add Rava. Keep the stove under medium flame. Fry till Rava turns brown.
- Add water and allow rava to boil completely. Add additional water, if required. Once Rava becomes soft add sugar.
- Mix well and switch off the stove once sugar melted fully.
- Add milk once the mix becomes cool. Add cardamom powder, raisins and roasted cashewnuts.
Notes
- Don’t add more water to boil rava as we have to add milk.
- You can add little Milkmaid along with milk to have added taste.
- You can soak 2 to 4 saffron strands in milk for 5 minutes and mash them well. You can add this mix to Payasam which will give both colour and fragrance.
