CARROT BEANS PORIYAL
Carrot Beans Poriyal is a South Indian stir-fry dish made with carrots and green beans, seasoned with curry leaves, mustard seeds, and grated coconut. To prepare it, chop carrots and green beans into small pieces. Then, temper mustard seeds and curry leaves in hot oil, add the chopped vegetables, and sauté until they are tender yet retain a slight crunch. Finally, sprinkle freshly grated coconut on top and mix well before serving. This colorful and flavorful dish has a nutritious side that accompanies rice or roti in a traditional South Indian meal.

- 150 Grams Carrot Cut into small pieces
- 100 Grams Green Beans Cut into small pieces
- 2 Teaspoon Cooking Oil
- ½ Teaspoon Mustard Seeds
- ¼ Teaspoon Cumin Seeds
- ½ Teaspoon Urad Dhal
- 1 Number Dried Chilli Remove the stem. Cut into small pieces
- 1 Handful Moong Dhal (split) Soak in water for 10 minutes
- Turmeric Powder As required
- Salt As required
- 2 Tablespoon Grated Coconut
- 150 ML Water
Keep the stove under medium flame. Put oil in the pan.
Once the oil is heated, put mustard seeds in it.
Add cumin seeds, urad dhal, and dried chilies when mustard seeds start splitting.
Add curry leaves
Add cut carrots and green beans
Add soaked moong dhal. Mix well
Add a little turmeric powder and the required salt
Mix well. Add a little water so that the vegetables will boil properly. Cover with lid. Keep the stove on medium flame. Ensure that carrots and green beans are boiled properly. If required, add some more water and cover with the lid again.
Once the vegetables are thoroughly boiled, add coconut. Mix well.
Carrot Beans Poriyal is ready. Switch off the stove.
